cool cucumber

I may have come upon a new staple this summer. When my latest issue of Real Simple magazine came in, I tested this recipe and have already been back to the store to buy more cucumbers and make more.
the quick + easy recipe { serves 2 }
1 pound { about 2 medium } peeled and roughly chopped cucumbers
1/3 cup sour cream
1/4 cup fresh mint leaves
1 tablespoon rice vinegar
1/2 teaspoon kosher salt
pinch of cayenne pepper
:: puree in a blender and serve chilled ::
